Easy Italian Potato Soup

Ingredients Gathering: Gather 4 medium potatoes, 1 onion (diced), 2 cloves of garlic (minced), 4 cups of low-sodium chicken or vegetable broth, 1 can (14.5 ounces) of diced tomatoes, 1/2 cup of small pasta (such as ditalini or small shells), 2 tablespoons of olive oil, 1 teaspoon of dried Italian seasoning, salt and pepper to taste, and optional toppings such as grated Parmesan cheese and chopped fresh parsley.

Prepare Ingredients: Peel the potatoes and cut them into small cubes. Dice the onion and mince the garlic.
